Migas Breakfast: Yummy!

HA! Despite my late morning…┬áThis morning shall be a Good Morning!

Today I am inspired to COOK!

What you will need:

Corn Tortillas
Salt (to taste)

Ok, this morning was all about this oldie but goodie. Migas. My dad would make these for me and I LOVED them so much as a kid. I still can’t believe I haven’t made these for my kids yet. I love love love┬ámigas.

I actually heard one of my kids say, “Oh my gosh, these are AWESOME!” which made me smile as I cooked my own batch of Migas.

Take a look below as I changed up my own recipe a bit more to my liking.

What you will need:

Corn Tortillas
REAL butter
Bell Pepper
Red Sofrito


Saute your onion and bellpepper in real butter (none of that fake stuff!)
Once they are soft add in the pieces of corn tortilla and cook until golden brown or however crispy you may like them.
Then, add your scrambled egg and cook thoroughly.
Once egg is cooked add desired sauce. I tried something new, which was Goya’s Sofrito. I added two heaping spoonfuls. This sauce made my Migas have more of a robust flavor. You do not have to add the sauce at this point. You can enjoy it instead with any salsa or hot sauce.
