This type of journaling/ to-do-listing has been so therapeutic. As someone with a love for doodling and all things artsy. I have used this method for the last month or so. It has come in very handy, as I have been able to go back and see what still needed to be accomplished. Not only that but it is very encouraging to be able to look back and see all that has been accomplished. If you need a way to look back and be able to have a source of encouragement. Or if you are in need of seeing that you are actually being productive, I highly recommend this wonderful method!

Cooking: Tostadas & Eggs

Delicious Breakfast Tostadas: Watching this video made my mouth water!!

Here are the ingredients you will be needing:

Russet Potatoes (peeled and shredded Or hash browns)
White Onion (Shredded- Save a bit for your salsa if you’d like)
Shredded Cheese
Bell Pepper
Corn Tortillas
Eggs (1 or 2 over easy per tostada)
Goya Adobo Seasoning (Or your preference of seasoning)
Salsa (of your choice)
Avocado (optional)
El Pato Sauce (This one is in a yellow can and is a spicy tomato sauce or salsa)

Many of the ingredients are optional to your liking. Toppings are your choice! =)

I have always wished there was a super simple way of making bread. I have a bread machine, but all the recipes require SO MANY INGREDIENTS! Thankfully, makeandtakes.com has shared this wonderful recipe. Sometimes, we just run out of bread and don’t have the time or resource to just run to the store and get more. But we do have all the ingredients to make bread! It’s good to always have a stock of Yeast, flour, salt and feed your entire family. This recipe makes 3 loaves of bread. I dare you, try it. Tell me what you think. I will be doing this one over the weekend with my kids!!!

Recipe for Homemade Artisan Bread 
makes 3 loaves

  • 3 cups lukewarm water
  • 1 1/2 tablespoons granulated yeast
  • 1 1/2 tablespoons kosher or other course salt
  • 6 1/2 cups unbleached all-purpose flour
  • cornmeal for pizza peel (optional)

Just a brain cell.

“Do you think perhaps, that the universe that we could be living in, is simply a brain cell to another living being?”


That question was asked on a trending Tumblr post, in reference to the study below:

This just blew my mind! Can you just imagine that our entire universe is just ONE of God’s brain cells?

The average adult human brain has about 100 billion cells.

How many brain cells does God have? Ok maybe too literal an analogy. We know that we aren’t simply one of God’s brain cells, but the magnitude of God is seen here. He has orchestrated our entire world from the smallest cell to the largest universe, our entire being. To think that He, who is bigger than all the universes, can possibly love a person like me? It’s astounding and I am humbled. So who can know everything and think they have all the information and knowledge to discredit God?

I can refer to this bible verse:

For, “Who can know the LORD’s thoughts? Who knows enough to teach him?” But we understand these things, for we have the mind of Christ. 1 Corinthians 2:16

The only way that we can begin to comprehend God is by having the mind of Christ. There are so many things that the human mind cannot understand. But as we dive into a deeper relationship with Him. We know him more. Without him we are nothing. He created us so that we might be a part of his family. He loves us. To think how small we are in comparison to him is humbling.

But, He created you with a purpose!

For we are his workmanship, created in Christ Jesus for good works, which God prepared beforehand, that we should walk in them. Ephesians 2:10

Watch this video on the brain of a developing infant and just think that God orchestrated this. There had to have been an intelligent designer to come up with such intelligent design. Watch below:

Wow. “The brain is the seat of our consciousness, of who we are, and in understanding where it comes from, we understand where we come from.”

For you created my inmost being; you knit me together in my mother’s womb. Psalm 13:13

Food for thought.

Think of it like this. No thing in existence can give the reason for its existence in or of itself. That means the Big Bang theory (the theory not the show) fails to give a reason for its own existence. The only answer that makes sense is that something transcendent of this universe can take the credit as “first cause”. God is not just bigger than our universe he transcends it.

Yet despite this, He loves you and you can see his love for you throughout creation!

Take time to think of God’s presence throughout creation and the workings of this world. God created the mind and from those minds are many things around you! Take time to thank God for all the good things around you.

Apple says iOS 9 is most successful update ever – Sep. 21, 2015

More than half of all iPhone users are using Apple’s new mobile operating system, iOS 9.

According to Apple: Here are some of the new benefits of upgrading to iOS 9:

  1. Power Saving Mode – The battery color in the top right corner turns yellow, indicating it is reducing power consumption until you can fully charge your phone. Mail fetch, background app refresh, auto downloads, and some visual effects are reduced or turned off
  2. Facetime & Video can be used Simultaneously on iPad–  Picture in Picture and Slide Over multitasking features are available on the iPad Air, iPad Air 2, iPad mini 2, and iPad mini 3. Split View multitasking is limited to the iPad Air 2, which has a more powerful processor that can handle two apps at once.
  3. Smarter Siri– She or He is now watching your every move. Stalker Siri. Based on actions you do repeatedly, for example, if you listen to music every morning when you go for a run, siri may open up the music app when you plug in your headphones. (creepy right?)
  4. Scribbling Function in Notes– YES!! Because who doesn’t like to scribble? But honestly I do like this feature because I remember things better when they are handwritten than when they are typed.
  5. Improved Apple Maps with transit directions– Great for those who ride the bus!
  6. Also One major bonus- This time the space that it takes up for this update is only 1.3GB as opposed to the 4.6GB we had before. Way to go Apple!
  7. Only thing I didn’t like…. why did you have to switch all the apps over to the left when I double click? It feels so wrong!

Cooking: Posole (Pozole) & Salsa

I’ve been really craving the foods I grew up on. The rich flavors and smells that would fill the room. I am feeling super nostalgic and hoping that I can give my kids the same beautiful memories. Why is it that food gets down into your soul? I am grateful that God gave us taste buds but as I grow older, my love for food is no longer just about what fills me up, but what tickles my taste buds.

This is super easy recipe: Yes, it may take a little longer to make (1-2 hours depending on the amount and the garnishes) Less if you are keeping it down to the basics.

You will need:


1 can of pre cooked hominy
2-3 lbs of chicken (your amount will be based on the size of your family/ how many servings you need)
Pot of Water
Salt or chicken flavored Bouillon (some prefer the tomato flavored ones)
1/2 to 1 Whole onion (I love onion so I use a whole one)

Instructions: In a large pot of water (enough water for a soup or stew, salt to taste. (chicken flavored bouillon rocks!), Add 1 or 1/2 onion, chicken, and hominy all at the same time.
this way the chicken, onion and hominy all soften at the same time. Bring to a boil then reduce the heat. Cook thoroughly until chicken is soft enough to shred and hominy is soft. That’s it! Everything else that added is for extra flavor and garnish.

Other than the salsa I will be posting below, here are some different ingredients I have seen added to Posole:

Shredded Cabbage
Chopped Onion
Thinly Sliced Radishes
Dried Mexican Oregano
Sliced Jalapeños
Cubed Avocado
Lime Wedges
Crumbled Queso Fresco

I promised my periscope audience that I would post a recipe for the chile that may be added to your posole to add some heat and flavor! Here are the ingredients:


Chile Japones (5 for babies like me -deseeded) More if you are wanting extra heat.
1 cup chicken broth from posole
1/2 cup cooked hominy
Sazon if you need more color


In a few tsp of oil, fry the chiles just for a moment. Do NOT overcook or they will be bitter. The more you cook the more bitter they become.
Put chiles in blender a little at a time and add chicken broth and hominy.
(Make sure the broth and hominy are cooled so that they don’t create pressure and jump in the blender.) Add onions, garlic, etc. including desired spices and flavors.

Blend well and adjust flavors to your specific heat and consistency (add chile or broth or hominy as desired or leave it as is!) Here is the video of me making this one. Bear with me as this was the first time I made it. Loved it!

Here also is a recipe for another red chile for posole:

3 c dried pozole
½ onion, chopped
3 large garlic cloves, peeled and smashed
3 dried guajillo chiles, washed, stemmed, and seeded
1 teaspoon dried Mexican oregano
6 ancho chiles, washed, stemmed, and seeded
2 quarts chicken stock
salt and pepper to taste



Fall Closet must haves!

The smell of Pumpkin spice, The changing colors, and the quick approach of the holiday’s. Sounds like FALL, my favorite season! Like I mentioned in my last fall fashion post, us Arizonans covet the change in weather and the array of colors but we can still enjoy a bit of fall fashion. I’ve compiled a list of some fall must haves that have definitely got me wanting to shop.

First thing you absolutely must have for Fall

Knee high+ Boots

In the Fall/Winter 2015 New York Fashion Week (NYFW), we saw an abundance of super high boots this look is super edgy. If you can’t find a high enough boot you can mimic this look with a knee-high sock. Short girls beware! a boot like this will make you look shorter! but don’t worry I have the perfect solution.

Ankle Boots

You can rock these in so many different ways. my advice is get a neutral color that will compliment any outfit. You can wear this with tights and shorts, jeans, and skirts. Both boots are a must have because they pair perfectly with every outfit, they are so easy to throw on and They complete any “Fall” look.

Whether it be a fedora, a medium rimmed, beanie or a riding style hat, you must have at least one. Works best with big curls, big braid or side bun.

Tons of scarves!


Oh the millions of things you can do with a scarf! There are so many different styles, textures, and designs, you can’t go wrong. Just be sure and stick to fall colors (which I’ll list below) so you don’t look to summery or springy. Also, NYFW featured Plaid prints and the best way, in my opinion, to incorporate them is a scarf. I love the Burberry style plaid print (drool).

Big glasses


Prescription or not, this is a huge trend you can wear all year. I love the way it pairs with big scarves and bold lipstick. You can even use them to add color by getting some with a burgundy or blue frame.

Tights and Socks


I mentioned earlier how knee-high socks can give the illusion of super high boots. But you can also pair socks with an ankle boot or rider boot. They will add a bit more to your average boot look. if you want to wear skirts or shorts with your boots, try pairing some lace tights or colored tights for a warmer more complete look. Tights were hot in this year’s NYFW!

There’s so many more trends and items I wish I could share with you, but for fear of making this to long I’ll make a quick list and add a fall color guide.

Fringe, lace, perfect trench/pea coat, gloves, bold lipstick, and oversized sweaters.

My journey from miscarriage to pregnancy: Raw & Real

Warning: This post contains mature material and was really scary to write. (Don’t read this Mom and Dad lol.)

I want to share this experience in hopes of bringing hope to someone no matter how scary or how long it takes me to write.

I was 18 years old and with my ex boyfriend of 2 years.  I was in love with love itself. My whole life I have always had so much love to give and I loved to be loved.

He had a wonderful family and I was drawn in by their open arms. As we began to get more serious, we began a physical relationship. Although the world’s view on sex has changed, I was raised with the value of waiting until marriage to have sex.

I went against my parent’s wishes and it wasn’t for the first time either.

I’ve always been told I’m a free spirit, and it continues to get me into trouble over the course of my life.
The end of our physical relationship:

I remember the fear rushing through my blood and reaching my heart making it beat faster than my breath could catch up with.
The condom had broken.
We were in this moment of not knowing what was going to happen or how we were going to fix it. We came up with a plan… and its name was B.

A pill that I knew little about and I took anyway.
After that I thought nothing of it until I got the pain.

You’re going to remember this forever.

I’m being evaluated in the emergency room for severe pain on my left side. They go through all the routine questions and routine tests and as I’m lying there waiting for results, I’m almost positive it has to be my appendix and the doctors are thinking the same thing as well. My mom is standing there by the bed and the nurse walks in, keep in mind my parents are unaware of the physical relationship I have with my boyfriend, and then it happens. You’re pregnant.

I try to avoid eye contact with my mom by staring at the nurse with this dumbfounded look in my eyes. What am I supposed to feel right now? I’m not married, whoa there’s a baby in there, I want kids, my mom is going to kill me. and then it hits me, wait, I’m on my period. So, if the pregnancy bomb wasn’t enough they hit me with the news that I have most likely miscarried.

They asked me if I’m on medications or if I’ve taken anything, and that’s when I remember that pill. That little pill I had no information about. In the midst of all the emotion I immediately think I took a pill for abortion. Since I had so little information on it I began to believe that I had unknowingly aborted a baby.
(But here’s what the pill really does.)

They moved me into another room. I could tell my nurse was confused by all the emotions flying around. She probably thought I’d be glad to be rid of an unplanned pregnancy. Little did she know how much I value life. So I lie there, sobbing deeply, hoping there would be a chance for this baby to survive, my face in the bed, as the nurse tries to comfort me.What she told me that day stays vivid in my mind, she said “You’re going to remember this forever, I know it’s hard, and even when you are pregnant again, all you’ll be able to think about is this.

Not long after all this, my boyfriend and I broke up. ________________________________________________________

Now I’m going to fast forward a few years of my life so I can talk more about my main topics. I can write about my actual Love life later. So, fast forward ahead 4 years, to when I’m 2 years into my marriage with my wonderful husband, David.

A new Journey

We had just gotten back from vacation and I’m about a week late. Now, we never used any birth control our entire marriage so I ALWAYS thought I was pregnant. Although we were not trying, pregnancy tests were a common household item. So, I thought, “No, it’s just me being paranoid…” and after going back and forth with myself and my husband, I thought, “What the heck.”

So, there I was waiting by myself in the restroom before work. My husband was still in bed. I peed on the stick, set it down, checked the time on my phone, and I was about to walk away, when- there they were. those two little lines! From the restroom, I call my husband with a tone of voice that says “Oh boy, wait until you hear what I have to say!”.. I hand it to him and he’s like “No way!”.

I spent the entire morning giggling, but we wanted to be sure so we agreed to talk about it that night, after work. On the way home, I went to the store and picked up one of those more expensive tests that tell you how far along you are and well you can watch for yourself:

Risks and decisions:

I was so excited and we hadn’t told anyone yet. I was about 5 weeks along, when the worst happened. I started getting a pain on my right side. I began to panic. I thought, “It’s happening, again.

I wasn’t bleeding so I just ignored it until it really got bad. I didn’t want to go to the emergency for fear of what I would be told, but I knew I had to take care of that baby. So, we went into the ER and they tested everything. They told me they couldn’t see a baby and that it was possible I had an ectopic pregnancy. They wanted to do surgery right away.

As I sat in that hospital bed in an emotional de ja vu, I couldn’t bring myself to make the decision of going through with the surgery because they weren’t 100% sure and the surgery itself could harm the baby. 12030971_10204521276463507_409143754_nI remember sitting there crying hysterically. The doctor told my husband he needed to make the decision for me. My husband decided to not risk my life with the risks of it being an ectopic pregnancy. Hysterical and emotionally not-all-there, they began wheeling me in. I didn’t even get the chance to realize what was going on fast enough to change anything. The last I remember was counting down from ten, with tears still on my face.

I wake up in a totally different area and see my nurse.

I’m going to remember this forever:

Remember how I told you about that last nurse who told me, “You’re going to remember this forever.” Well, this moment, I will also be remembering forever. The moment my nurse said, “Hi honey, it was just your appendix…

The baby is fine

I took another test to make sure my levels went up and not down. to make myself feel better
Just typing this is making me tear up 
because the rest of my pregnancy was perfect. 

We found out we were having a baby girl

This experience has taught me to value life even more and that sometimes things happen for a reason. In no way am I saying that a miscarriage is ever a good thing because it was devastating and heartbreaking, but I look back now and think of where I would be if things would’ve turned out differently. I am absolutely surrounded by joy and love right now and I can’t imagine my life without my Lily.
